Dad's Diabeetus Candy Cookies by enkeli19 Dad's Diabeetus Candy Cookies by enkeli19
I love my dad for coming up with these, they're huge! I had to make some of these and send some to my dad in St. Ignace Michigan. I figured this would be a good thing to send my dad since he's working on the Mackinac Bridge (the bridge between the upper and lower peninsulas)

Oven @ 350 degrees
prep cookie sheets with aluminum foil, shiny side down

4-1/2C Flour
2tsp Baking soda
1tsp Baking powder
1tsp Cinnamon
1/2tsp Nutmeg
2C Softened butter (I usually just let it sit out for about an hour)
1-1/2C Packed Dark Brown Sugar
1/2C Granulated Sugar
2Boxes Vanilla Pudding
4Eggs
2tsp Vanilla Extract
1 10oz pkg Heath Toffee
1 12 oz pkg Milk Choc. Chips
1 12 oz pkg Semi Sweet Choc Chips
1 9 oz pkg mixed nuts

Sift together flour, baking soda, baking powder, cinnamon and nutmeg and set aside. In a large mixing bowl cream together the butter, brown sugar and granulated sugar. Beat in Instant Pudding Mix. Stir in eggs and Vanilla. Blend in Flour mixture. Mix in Chips and Nuts (chopped to about the same size as chips) Use 1/4 Cup measuring cup for each cookie, flatten cookies to 3/4" on cookie sheet and place 2" apart. Bake 12 -15 min

*I used a mixture with mainly cashews and macadamias ^-^

**oops forgot to say it makes about 3 dozen cookies XD

***Okay, my best friend and boyfriend officially made the best name for these. It started off as Diabetes Candy Cookies as my friend called it... then my boyfriend said it had to be Diabeetus, not Diabetes.

You can get an oven thermometer to start, you put it in your oven and you'll see what the oven's actually at. And I don't wander out of the area when I'm making these, I usually also keep checking on them when it comes close to time and kind of in 3 minute increments, first at 7 then 10 etc. etc. I hope that helps :aww:

I'd have to ask dad, but, it's pretty much just mix everything and bake. I'd personally be afraid of how cookies would look coming out of a microwave, and you won't be able to do all of them at once really.
